Antipasti

Traditional Italian antipasta (also called ante pasta or antipasto) translates to "before the pasta" as pasta is usually the first course in any traditional Italian meal. A traditional antipasta course consists of savoury cold foods such as cheeses and raw or marinated vegetables, as well as cold cuts and cured meats such as prosciutto. It varies regionally with preserved mushrooms and salumi in the North, and preserved vegetables and fish in the South.
